The family run Giorgi Estates is the one of the best Italian wine producers of the champenoise method. The vineyard was founded in 1875 in the heart of Oltrepo’ Pavese, where the best quality vines grow.
Here they have studied the champanoise method processes and adapted them to the grapes of Oltrepo’ Pavese with great success.
Crudoo is one of the latest projects of Giorgi. Starting from a selection of the best Pinot Nero and Chardonnay grapes in the vineyard, followed by an accurate alcoholic fermentation at low temperatures. The enologist uses these grapes to create a perfectly balanced cuvèe. The second fermentation occurs in autoclave, and for the first time in the world the tank is connected with classical music vibrations. This special process softens the polyphenols, creating a more rounded wine with freshness and deep flavours. Then, during the last months of second fermentation, Giorgi adds some exhausted yeasts previously used in the champenoise method, in order to characterize the Crudoo with special flavours.
