The Pinot Grigio has always been one of the best white wines produced in the North East of Italy. Its copper grapes, during the winemaking process, are immediately separated from the must in order to avoid any damage of its straw- yellow colour. Careful attention to details of winemaking, allows the wine to have a low acidity while its floral characteristics are enhanced by a balanced freshness.

The harvest is strictly picked by hand and placed into small containers in order to carry the grapes to the cellar. Crushing and racking of the lees is delicate in order to allow the natural sedimentation of the must. Then there is a short period of settling in total absence of sulfur dioxide. The total absence of chemical additives and the presence of natural grapes provide the natural aging of this wine that in just a few months after bottling developes high qualities.
