The Vinum Pecorino D.O.C. is an organic fine wine, which draws on the history of the unique Pecorino produced by Romans 300 years BC. Roberto Dragani designed this wine to preserve an ancient tradition of a grape that due to the vine’s low yield is almost extinct today.

The vines are located on the hills in the small town of Nocciano, in the center of the Abruzzo region, with South – South West exposure. Roberto does a meticulous selection of the best grapes first in the vineyard, then in the cellar. After a soft pressing and 10 hours of maceration on the skins, the must decants for 12 hours. This technique is used for extracting the aromatic components from the skins and to give body to the wine. After separating the must from the skins, the alcoholic fermentation starts adding native organic yeasts in stainless steel tanks at a controlled temperature of 16°C, which preserves all the typical Pecorino’s aromas.

The Vinum Pecorino D.O.C., even if it is a young wine, is a quite complex white wine, which is representative of the terroir of the Center of Italy. High scores and prizes by Luca Maroni, which quoted this Pecorino D.O.C. as one of the best of Italy.
