The 47 Anno Domini Estates once again sets itself apart with their superior winemaking. The grapes used in this Sauvignon are known to be hard green grapes and difficult to vinificate. By performing a late harvest the grapes are allowed to over ripen. This makes them softer, juicer and smooth for vinification.


The ripest bunches are meticulously selected and carefully transported to the winery. Due to the late harvest of the grapes, it is not necessary to add must during the vinification process to prevent a musky smelling product. The wine will naturally preserve its organoleptic features. Fermented at a low controlled temperature, the alcoholic fermentation is relatively quick, thanks to the high yeast and sugar content in the grapes. The wine then ages for a minimum of three months, producing a distinguished wine.
